In keeping with the appreciation article last week I thought I would stick with the theme of gratitude.

For those of us in the Bay Area we are lucky to have the restaurant Café Gratitude (A raw food delight). My husband says Café Gratitude is not a restaurant it's an EXPERIENCE! And so are their raw foods desserts.

In celebration of my husband's birthday this week I have been experimenting with many of their desserts. (Raw food desserts are his favorite!)

Below is their recipe…

I AM DEVOTED - Live Coconut Cream Pie

I AM DEVOTED
Live Coconut Cream Pie

FOR THE CRUST
2 1/2 cups dry coconut flakes
1/4 teaspoon vanilla
1/8 teaspoon salt
Heaping 1/4 cup well packed finely chopped dates (I used more)

FOR THE FILLING
1 1/2 cups coconut milk (from a fresh thai coconut)
1/4 cup coconut meat (from a fresh Thai coconut)
Heaping 3/4 cup well packed finely chopped dates
1/2 teaspoon vanilla
2 pinches salt
3 tablespoons lecithin
1/2 cup plus 2 tablespoons raw coconut bitter

TO MAKE CRUST
Put coconut flakes, salt and vanilla in your food processor. (use S blade)

Begin to process, adding small amounts of the date until crust sticks together. Press crust into a greased 9 inch pie pan (grease with coconut butter).

* I found that the crust is a bit flakey in the food processor but when you put it in the fridge it firms up.

TO MAKE THE FILLING
Blend coconut water/milk, coconut meat, vanilla, and salt until smooth. Add lecithin and coconut butter and blend until well incorporated. Pour into prepared crust. Set in fridge or freezer until set. (about 1 hour)

Top with thin layer of coconut flakes.
