This recipe takes about 2 minutes to make. Really, I mean it!

Sticking to the theme of body image and weight loss I thought this recipe would be perfect. Sometimes, we crave food or a snack that is filling but wont leave us feeling heavy or bloated. For me, even if nothing changes on the scale or if my pants still fit, feeling bloated often results in mind games when it comes to my body image.

This recipe is filling but not "heavy". I think it's because it leaves out the beans, replacing them with zucchini. And since summer squash season is coming, it's a PERFECT snack, sandwich stuffer, appetizer or addition to any spring picnic.

Zucchini Hummus

one Zucchini (peeled + chopped in chunks)
two Tablespoons Raw Tahini
two Tablespoons Lemon Juice
one Clove Garlic
one fourth Teaspoon Paprika
one fourth Teaspoon Cumin
one fourth Teaspoon Salt
A touch of cayenne- (optional)

Blend all ingredients together until smooth in a food processor, blender or vitamix.**

NOTES:
You may need some olive oil or water to get the blending going.

The amounts are suggestions so add more or less garlic, use the cayenne or don't, add more spices or zucchini. The Fruition Cooking Theme is not just quick, easy and healthy but also adaptable to YOUR tastes and experimentation!
