  recipe of the month

Pumpkin Pie

FILLING:

1 1/2 cups pumpkin puree (you can make it yourself by boiling or baking a pumpkin - any kind will do, just don't use the skin - and then pureeing it) or canned organic pumpkin.
2/3 cup maple syrup
3 Tablespoons molasses
1/2 teaspoon vanilla extract
1 teaspoon cinnamon
1 tablespoon minced fresh ginger, or 1 teaspoon ginger powder
1/4 teaspoon ground nutmeg
1 teaspoon ground allspice
4 teaspoons arrowroot
1/2 cup soymilk


CRUST:
1 cup ground pecans
1 cup ground rolled oats
1 cup wheat flour or spelt or rice flour
1/2 cup maple syrup
1/4 cup oil

Preheat the oven to 350 degrees. In a food processor or blender, combine the pumpkin puree, maple syrup, molasses, vanilla, cinnamon, ginger, nutmeg, allspice, arrowroot, and soymilk, in batches if necessary. Process until the mixture is well combined and smooth.

Grind pecans and rolled oats in a blender. Mix all ingredients together and press into a pie pan.

Pour filling into the piecrust and bake for 30-40 minutes, or until the filling has firmed up. Sometimes you will see the filling start to form cracks in it, which tells you it is getting firmer.  Let cool.

Serve with frozen vanilla rice dream or soy delicious or organic vanilla ice cream.

Cashew cream is really great too.

OPTION: If you don’t want to make the pie crust just make pumpkin pudding!

LOVE THE SKIN YOU'RE IN
Transforming Body Image.

A workshop for women.

  • Do you ever look in the mirror and wish you saw something different?
  • Do you find yourself comparing your body to others in yoga class?
  • Do you wish something were different about your body?
  • Do you sometimes think a certain foods will make you "fat"?
  • Is your exercise routine fun and pleasurable or stressful and draining?

As women, we are conditioned to think that our body needs to look a certain way. We accept societal standards about body image and act accordingly, blaming ourselves, adopting restrictive diets, or intense exercise regimes that often lead to injury.
The practice of yoga teaches us about compassion, change, fluctuation, steadfastness, release, acceptance, tapas, strength, and much more.
Have you ever considered that your body craves to learn about these qualities as much as the mind and spirit?

This workshop is an opportunity to demystify some of these thought patterns and learn to love the skin you are in.

During our time together we will:

  • Explore how to honor the body’s natural rhythms and fluctuations.
  • Learn kinder ways of speaking to ourselves.
  • Learn to accept and love the bodies we currently live in through the tools of yoga asana, pranayama, meditation and more.
  • Learn to discern between realistic health goals and unrealistic expectations.
  • We will use body awareness exercises, movement, journaling, sharing and writing to explore and go deeper inside.
