Holiday Kugel
Preparation time: 20 minutes
Cooking time: 30-40 minutes
Yields: 10-12 servings
3 cups carrots, grated
3 cups squash, steamed and mashed
3 apples, grated
1 cup raisins
1 cup matzo meal
1 cup walnuts, chopped
1 cup apple juice
cinnamon
Mix all ingredients except cinnamon and press well into a lightly oiled 9x13 baking dish.
Sprinkle top with cinnamon.
Bake at 375° until top is firm and crusty.
Heavenly Macaroons
2 1/2 cups shredded coconut
1/2 cup of pastry flour (whole wheat or spelt) * you can try rice flour too for those of you not eating wheat- I've never tried it but I think it will work, let me know how it goes
1/4 teaspoon sea salt
1/4 cup rice syrup
1/4 cup maple syrup
1 tsp. almond extract
1/3 to 1/2 cup water.
Preheat oven to 350°
Line baking sheets with parchment or brush with oil.
Mix dry ingredients. In another bowl, whisk wet ingredients together then add to dry and mix well. With moistened fingers, squeeze 1 1/2-inch balls of dough
Transfer to baking sheet and bake until golden about 20 minutes.
